Sprouted Moong Bean Salad Recipe Prep Time: 10 Minutes (approx)
Serves 2-3 People
INGREDIENTS:
1 Cup Sprouted Moong Beans
1/2 Cup Roasted, Salted Peanuts (add more if you like)
1/4 Cup Fresh, Chopped Coriander
1/4 Medium, Red Onion Chopped Finely
1 Small, Long, Red Pepper Chopped Finely
2 Tbspn Extra Virgin Olive Oil
2 Tbspn Lemon Juice
Salt & Pepper to taste
A sprinkle of Chaat Masala if desired
METHOD:
Prepare all the above ingredients, so they are ready.
Just mix the above ingredients in a bowl right before serving!
Variations: Try it switching some of the ingredients with chopped cucumbers, tomatoes, quinoa, couscous, parsley, dill, spring onions, roasted walnuts, chickpeas, vinegar instead of lemon juice etc. to give variety.
