Raita is a cool, refreshing side dish that goes very well with all Curries, Biriyani and with Gujarati Dal and Rice. I just love it and have been making it a lot recently!
Some of the key things to make really delicious Raita are to:
- squeeze out as much liquid from the cucumber as possible;
- get a thick Yoghurt, like Greek Yoghurt, or use a cheesecloth to remove water from plain Yoghurt;
- Let the Raita sit in the fridge for at least an hour once made so the spices mix well.

Raita Recipe Cooking Time 15 Minutes (Approx)
Let it sit for 1 hour in fridge
Serves 3-4
INGREDIENTS:
A 10 Inch Cucumber (approx)
A Small Piece of Carrot
2 Tbspn Chopped Coriander
1 tspn Salt
1 tspn Ground Cumin
1/4 tspn Ginger-Garlic-Chili Paste
1/2 tspn Whole Mustard Seeds
1 Cup (250ml) Greek Yoghurt
METHOD:
Grate the cucumber in a bowl.
Squeeze the liquid from the grated cucumber then place the cucumber in a separate bowl.
Grate the carrot into this bowl.
Add all the remaining ingredients and mix well.
Refrigerate the mixed Raita for at least 1 hour to allow the spices to combine.
Enjoy with any Indian dish!
