I hadn't made or eaten laapsi for a very long time! I think I was afraid to make it and have it turn out bad! But a quick conversation with my mother-in-law put my mind at ease and so here I am with this quick, easy and successful recipe of how to make great laapsi! But be sure to follow all the tips in my video!

Perfect Laapsi Recipe Cooking Time 30 Minutes (Approx)
Serves 3-4 People
INGREDIENTS:
· 3/4 Cup (150g) Medium Bulgur Wheat (Laapsi)
· ¼ Cup (50g) Ghee
· 2 Cinnamon Sticks
· 4 Cups (480ml) Boiling Hot Water
· 1/4 Cup + 2 Tbspn (85g) Granulated Sugar
· 15g (14 - 15) Almonds Sliced Thick
· 1/2 tspn Cardamom Powder (Elchi)
· 1 tspn Sultanas (optional)
· 1 tspn Aniseed (Variyari)
METHOD:
Make sure you weigh the dry ingredients and Ghee for accuracy.
Heat Ghee in a deep pan on a low heat.
Add Cinnamon Sticks & fry until you can smell the cinnamon scent.
Meanwhile, slice the Almonds into 3 thick slices.
Add Bulgur and fry on lowest heat until it is golden brown (about 10 minutes).
Add Aniseed, sliced Almonds, Sultanas and fry for about 1 minute.
Then, with the lid handy, add the boiling, hot water very carefully.
Cover & cook the Bulgur on the lowest heat for 20-30 minutes or until the grains of bulgur are cooked through and the moisture has evaporated.
Add the Sugar (Note: it won’t cook more after adding the Sugar). And add the Cardamom Powder.
Stir and cook for another 1-2 minutes.
The Laapsi is ready to enjoy!
