My son, who is vegan, has a sweet tooth and loves his cakes and cookies and "NICE" biscuits! I've tried a few vegan dessert recipes here and there but this is the one where he said "mum, this is a keeper!" So I'm sharing it with you! Enjoy!
Vegan Coconut Cookies Recipe Cooking Time: 30 Minutes (Approx)
Makes 20 Cookies
INGREDIENTS:
100g Vegan Margerine (I used Vitalite brand)
50g Caster Sugar
1/2 tsp Coconut Essence
1/4 tsp Vanilla Essence
1 Tbspn Oat Milk
125g Self Raising Flour
A Pinch of Salt
40g Freshly Grated Coconut (can substitute desiccated coconut)
Granulated Sugar for sprinkling (optional)
METHOD:
Mix the flour, salt and coconut in a bowl and leave it aside.
In another bowl, beat together the vegan margarine and the sugar until it is well combined (about 2 minutes).
Add the coconut and vanilla essences and the oat milk and gradually mix in the dry ingredients.
Mix until the dough is combined but don't over mix.
Cover the dough bowl with cling film and refrigerate for about 30 minutes.
Preheat your oven to 160ºC.
Line a baking tray with parchment or greaseproof paper.
Place a heaped teaspoon ball of dough on the paper at least 3cm apart.
Press the ball down with a fork to the desired thickness. It won't spread too much so make them the thickness you like.
Sprinkle with some sugar if you like.
Bake them in the oven for 20-25 minutes until they are as brown as you like them.
Let the cookies cool on the tray for 10 minutes then move them to a wire rack to cool completely.

Store any remaining cookies in an airtight container.
