Chicken Shawarma Recipe Prep Time: 15 Minutes (Approx)
Marinating Time: 2 Hours - Overnight
Serves 4-5 People
INGREDIENTS:
1 KG Boneless, Skinless Chicken Thighs
250ml (1 Cup) Yoghurt (Plain or Greek)
2 Tbsp Ketchup
2 Tbs Olive Oil
Juice of 1 Fresh Lemon (about 2 Tbsp)
4 tsp Crushed Garlic (6-7 Medium Cloves)
1 Tsp. Freshly Ground Black Pepper
1 Tsp. Smoked Paprika
1 ½ Tsp. Roasted, Ground Cumin Seeds
1/8 Tsp. Ground Cinnamon
2 tsp. Salt
1 Tbsp. Red Chili Flakes
METHOD:
Remove any excess fat from the chicken thighs and wash & drain them, if desired.
In a large bowl, whisk the marinade ingredients together using a hand whisk.
I like to marinate my meats in a zip tight bag as it’s easier to mix and store in the fridge.
Open the plastic bag and fold the top of the bag as if you are going to turn the bag inside out. This helps to make sure the top of the bag doesn’t get dirty.
Add half the meat, then half the marinade. Then add the remaining meat and marinade.
Close the bag, ensuring it is shut tightly to avoid any leaks.
Then mix it to ensure all the chicken meat is covered in the marinade.
Marinate the meat for a minimum of 2 hours; overnight is best.
Cook on the barbecue for best results. Then slice to desired thickness.
Enjoy with tzaziki, hummus, pita and salad.
